50 g soft butter
1/4 cup honey
1/4 cup barbeque sauce
2 tsp mustard
6 chicken breast fillets
Step 1 Score top of chicken breasts.
Step 2 Mix together marinade ingredients and coat chicken with half of the mixture.
Step 3 Cover with plastic wrap and leave for ½ an hour.
Step 4 Heat pan to medium with a little oil and put chicken breasts in, scored side up.
Step 5 Turn after 3-4 minutes. Keep coating chicken every 3-4 minutes until cooked.
As with a lot of marinades, this can be prone to burning if you have the temperature up too high, so be sure to keep it no higher than medium heat. You may want to seal the chicken in the frying pan for a few minutes and then put them in the oven to finish off, still coating every 5 minutes or so.
